Review of the 9th Annual Boca Symposium for Metabolic Health

The 9th Annual Boca Symposium for Metabolic Health, held from January 22-24, 2025, in Boca Raton, Florida, was a landmark event in the field of metabolic health. Organized by LowCarbUSA, the symposium featured a diverse lineup of experts who shared groundbreaking research and clinical insights into therapeutic carbohydrate reduction and its applications in treating various metabolic disorders.

This was ROSETTE'S third year at the symposium, and it just keeps getting better! We loved reconnecting with familiar faces, meeting new ones, and sharing our low-carb, sugar-free, and gluten-free baking mixes with the community. It’s always amazing to see how many people are just as passionate about metabolic health as we are. More than anything, we love showing that eating low carb doesn’t have to mean giving up the foods you love. There are options to make it easier—and we’re so grateful to be part of that journey!

A common question we received was: "Why don’t you use allulose in your mixes?" I enjoyed explaining the science of baking to curious attendees. While we do use allulose to create the perfect replacements for caramels, syrups, and ice creams, its properties make it less ideal for baked goods that are meant to be crispy. Allulose bakes softer, which can work beautifully for cakes or even if we wanted to create a soft-baked chocolate chip cookie. However, our goal has always been to offer authentic low-carb replacements that stay true to both texture and flavor, and for our cookies and shortbreads, our current recipes achieve that better than anything else we’ve tested so far.

One of the highlights of the symposium was the exclusive bonus workshop led by the Toward Health team, spearheaded by Dr. Tro Kalayjian. This session was a deep dive into the practical aspects of the low-carb and keto diet, covering real-life strategies to help attendees successfully implement and sustain metabolic health changes. From meal planning and overcoming carb cravings to optimizing nutrition for long-term success, the workshop provided hands-on guidance to both newcomers and seasoned low-carb enthusiasts. It was a tremendous addition to the event, offering practical takeaways that attendees could immediately apply to their daily lives.

Another highlight of this year's symposium was the dedicated Women's Health Day on January 24th. The day featured presentations from an all-female lineup of experts specializing in women's metabolic health. Topics included hormonal imbalances, thyroid health, PCOS, endometriosis, and female-specific cancers.

Beyond the presentations, the symposium provided valuable networking opportunities. Attendees had the chance to interact with speakers, ask questions, and share experiences, fostering a strong community of healthcare providers, researchers, and individuals committed to metabolic health.

The conference was a success, bringing together experts, vendors, and attendees dedicated to improving metabolic health.
